Pétillant naturel, or “Pét Nat,” is a sparkling delight that differs from the classic production of sparkling wine in one key respect: The wine undergoes only one fermentation. This begins in a steel tank and is completed in the bottle—without the addition of sugar or yeast. Hence the name “pétillant naturel,” meaning “naturally sparkling.”
